Zesty Mexican Cauliflower

Steamed cauliflower and fresh cooked corn tossed in a sauce prepared from sour cream, mayonnaise, red pepper sauce, salsa and cheddar cheese.

Ingredients -

1 cup Cauliflower Florets
1/3 cup Sour Cream
2 teaspoons Mayonnaise
3/4 teaspoon Red Pepper Sauce
1/3 cup Salsa
2 tablespoons + 2 teaspoons Cheddar Cheese, shredded
1 cup Fresh Corn, cooked

 
Preparation:

1. Steam the florets over boiling water for 5 minutes or until fork tender.

2. Drain and place to the side.

3. Combine the sour cream, mayonnaise, red pepper sauce, salsa and cheddar cheese in a large saucepan over medium heat, stirring constantly.

4. Add the cooked cauliflower and corn.

5. Mix well and serve.
