Potato Cauliflower Mash

Boiled potatoes and cauliflower are mashed and combined with green onion sour cream and Parmesan cheese. Seasoned with salt and pepper and served hot.

Ingredients -
1-1/2 pounds Potatoes, peeled and cubed
1 Cauliflower, cut into florets
5 Green Onions, thinly sliced
1/2 cup Sour Cream, room temp
1/2 cup Fresh Parmesan Cheese, grated
Salt and Fresh Ground Black Pepper, to taste
 
Preparation:

1. Bring the potatoes and enough salted water to cover to a boil in a saucepot.

2. Cook for 10 minutes.

3. Add in the cauliflower florets.

4. Cook until the potatoes and cauliflower are fork tender.

5. Drain and return the potatoes and cauliflower to the saucepot.

6. Coat a skillet with nonstick cooking spray.

7. Cook the green onions for 3 minutes.

8. Mash together the potato cauliflower mixture until it becomes smooth.

9. Stir in the sliced green onions, sour cream and cheese until well blended. Season with salt and pepper to taste.

10. Transfer the mash to a serving bowl.
