Marinated Cauliflower

Cauliflower marinated in Italian dressing, tossed with real mayonnaise, bacon bits and Parmesan cheese.

Ingredients -
1 Cauliflower Head, broken into small florets
1 (8 ounces) bottle Italian Dressing
1 cup Real Mayonnaise
1/4 cup Bacon Bits
1/4 cup Fresh Parmesan Cheese, grated
 
Preparation:

1. Place the cauliflower in a large ziplock bag and cover with Italian dressing.

2. Place the bag in a bowl and refrigerate overnight.

3. Drain the cauliflower and discard the dressing.

4. Stir in the mayonnaise, bacon bits and cheese.

Cauliflower in Soups

Tiny bite size pieces of cauliflower are perfect for vegetable soups. Expect 10-20 minutes cooking time to soften the cauliflower pieces.

Bacon Bits

Bacon bits can be purchased in most supermarkets and are generally found in the spice section. You could substitute 2 cooked crisp, drained, and crumbled bacon slices for the bacon bits, if necessary or desired.
