Frosted Cauliflower

Cooked cauliflower added to casserole dish and tossed with real mayonnaise and Dijon mustard. Mixture is seasoned with salt, topped with shredded cheddar cheese and baked until golden brown.

Ingredients -
1 head Cauliflower, whole, leaves removed, woody base trimmed, and rinsed
Coarse Salt
1/2 cup Real Mayonnaise
2 teaspoons Dijon Mustard
3/4 cup shredded Sharp Cheddar Cheese
 
Preparation:

1. Preheat the oven to 375 degrees F.

2. Add more than enough water to easily cover cauliflower to large saucepan. Add 1/2 teaspoon salt and bring to a boil over high heat.

3. Cook cauliflower 12 to 15 minutes. Drain in colander.

4. Add cauliflower to baking dish.

5. In small bowl, combine mayonnaise with Dijon mustard.

6. Season cauliflower with salt. Spread mayonnaise mixture over cauliflower.

7. Top cauliflower with shredded sharp cheddar cheese.

8. Bake about 10 minutes or until cheese melts.

Pureed Cauliflower

Pureed cauliflower with a small amount of soup stock or water can be added to soups to thicken them.
