Creamy Cauliflower Salad

Cauliflower florets tossed with quartered grape tomatoes, bacon pieces, shredded cheddar cheese, and chopped hard cooked eggs. Salad is tossed in dressing prepared from sugar, vinegar, fresh lemon juice and real mayonnaise.

Ingredients -
1 head Cauliflower, cut into florets
1/2 cup Grape Tomatoes, quartered
3 tablespoons Bacon Bits
1/4 cup shredded Cheddar Cheese
3 Hard-Boiled Eggs, chopped
1 cup Mayonnaise
1/3 cup Sugar
2 tablespoons Vinegar
1 tablespoon Lemon Juice
 
Preparation:

1. Chop the hard boiled eggs into small pieces.

2. In a bowl, toss the florets, tomatoes, bacon bits, cheese, and eggs together.

3. Dissolve the sugar into the vinegar and lemon juice.

4. Whisk in the mayonnaise until the mixture is thoroughly combined.

5. Pour the dressing over the salad, and toss gently to coat.

6. Cover and refrigerate until well-chilled.

7. Toss again gently, and serve.
