Cheddar Mashed Cauliflower

Cooked cauliflower combined with minced fresh garlic, onion powder, butter, half-and-half, shredded cheddar cheese, fresh ground black pepper, and fresh parsley. Mixture is added to food processor and pulsed to desired consistency.

Ingredients -
1 large bag Frozen Cauliflower
1/2 teaspoon minced Fresh Garlic
1 teaspoon Onion Powder
1 tablespoon Butter
1/3 cup Half-and-Half
3 ounces shredded Cheddar Cheese
1/2 teaspoon Fresh Ground Black Pepper
1 teaspoon Fresh Parsley
 
Preparation:

1. Prepare frozen cauliflower according to package instructions. Drain in colander.

2. Add minced fresh garlic, onion powder, butter, half-and-half, shredded cheddar cheese, fresh ground black pepper, fresh parsley, to small sauce pan.

3. Heat over low heat until smooth.

4. Add cauliflower and cheese mixture to food processor and process to desired thickness.

Garlic

Flavor is imparted from oil released when garlic is cut. Chopping releases more oil and crushing the clove will impart the strongest flavor. The flavor of garlic can get stronger in foods after cooking and storing as the garlic oil has had a chance to releases naturally in cooking liquids.
