Cauliflower Medley

Simmered cauliflower florets, Italian stewed tomatoes, chopped bell pepper, chopped onion, and butter seasoned with salt and pepper. Tender vegetables spooned into casserole dish, topped with cheddar cheese and baked until cheese has melted.

Ingredients -
1 head Cauliflower, cut into florets
1 (15 ounces) can Italian Stewed Tomatoes
1 Green Bell Pepper, chopped
1 small Yellow or White Onion, chopped
1/4 cup (1/2 stick) Butter
Water
Coarse Salt
Fresh Ground Black Pepper
1 cup Shredded Cheddar Cheese
 
Preparation:

1. Add cauliflower florets, Italian stewed tomatoes, chopped bell pepper, chopped onion, butter and a few tablespoons water to large saucepan.

2. Season with coarse salt and fresh ground black pepper.

3. Simmer over medium heat until cauliflower 10-12 minutes.

4. Spoon into 2-quart casserole dish.

5. Top with shredded cheddar cheese. Bake at 350 F until cheese is melted.

Cauliflower

Cauliflower that is soft or wilting should probably be avoided unless you are cooking with it immediately. Cauliflower will show light brown coloring on the head as it ages. Cauliflower should always be stored in the refrigerator.

Italian Stewed Tomatoes

Italian stewed tomatoes can be found in the canned food section with other vegetables. You could substitute regular stewed tomatoes for the specially flavor tomatoes and season the dish with oregano, basil, garlic or any other favorite herbs and spices.
