1. Add cauliflower florets, Italian stewed tomatoes, chopped bell pepper, chopped onion, butter and a few tablespoons water to large saucepan.
2. Season with coarse salt and fresh ground black pepper.
3. Simmer over medium heat until cauliflower 10-12 minutes.
4. Spoon into 2-quart casserole dish.
5. Top with shredded cheddar cheese. Bake at 350 F until cheese is melted. |
