Broccoli Cauliflower Salad

Broccoli and cauliflower florets, chopped green onion, and cubed mozzarella cheese is tossed in a dressing prepared from real mayonnaise, white vinegar and granulated sugar.

Ingredients -
1 small Head Cauliflower
3 Broccoli Stalks
1 cup Mayonnaise
1 tablespoon Vinegar
1 tablespoon Sugar
1 bunch Fresh Green Onions with tops, chopped
8 ounces Mozzarella Cheese, cubed
 
Preparation:

1. Chop up the cauliflower and broccoli into bite-size florets.

2. Combine the mayonnaise, vinegar and sugar and add to cauliflower- broccoli mixture.

3. Add the green onions and mozzarella cheese to the mixture.

4. Add salt to taste.

5. Toss and chill.

Scallions

Also called green onions and salad onions, these slender onions are immature yellow onion bulbs. Scallions are mild and sweet and well suited for eating raw. Scallions should be rinsed, the bottom base removed and the top green section trimmed back slightly. Both the white and green sections are edible; the white section imparts a stronger flavor.
